Chill -n- Grill Potato Salad


2 lbs. Yukon gold potatoes

3 hard-boiled eggs

3 green onions

4 TBL. paleo mayo (homemade or bought)

1 TBL. yellow mustard

3 TBL. shallot or onion, diced small

1 tsp. red wine vinegar

1/2 tsp. celery seed

1 tsp. Chill -n- Grill


*peel & cut potatoes into 1-inch cubes

*boil potatoes in water until soft, drain & cool, then place in a large bowl

*peel & slice eggs & place in bowl with potatoes

*slice white & light green parts of the green onions & add to potatoes

*whisk together mayo, mustard, shallot or onion, vinegar, celery seed & Chill -n- Grill 

*pour dressing into the potato bowl & mix it all up

*shake a little extra Chill -n- Grill on top

*chill in the fridge until ready to serve
